Ingredients
Steak
- 2 KC strip steaks (6–7 oz each)
- 2 tsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
Blueberry-Balsamic Reduction
- 3/4 cup blueberries
- 3 tbsp balsamic vinegar
- 1/3 cup beef stock
- 1 small shallot, minced (Yes, it has to be a shallot. No other onion is quite right.)
- 1 garlic clove, minced
- 1 tsp butter
- 1 tsp honey
Light Whipped Feta
- 2 oz feta cheese
- 1/3 cup nonfat Greek yogurt
- 1 tsp olive oil
- 1 tsp lemon juice
- Black pepper to taste
Optional Vegetables
- Broccolini (Make sure to cut the stems down. You’ll be sad if you don’t. You should probably cut them a little lower.)
- Asparagus (Same as above.)
- Brussels sprouts (At least cut them in half. They’ll cook better.)
- Arugula salad (I’ve haven’t actually made one yet, but I bet it’s good.)
Instructions
1. Make the Whipped Feta
Add feta, Greek yogurt, olive oil, lemon juice, and black pepper to a bowl and wisk until mostly smooth. (Or if you don’t mind cleaning the thing, you can blend these and it’ll be better.)
Refrigerate while preparing the rest of the dish.
2. Season the Steak
Pat steaks dry with paper towels. Like, really make sure they’re dry. It helps make a really nice, crisp sear.
Season both sides with:
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
Let steaks sit at room temperature for about 20 minutes. I put them on paper plates so I don’t have extra dishes.
3. Cook the Steak
Heat a cast-iron skillet over medium-high heat.
Add 2 tsp olive oil.
Sear steaks:
- 4.5 minutes on the first side
- 4.5 minutes on the second side
I like my steak medium, so you’ll have to adjust the cook time for what you like.
Remove steaks and let rest for 5–10 minutes before slicing. (Or don’t slice them. I dont’ when I’m feeling lazy at this point.)
4. Make the Blueberry-Balsamic Reduction
Using the same skillet:
- Add shallot and cook for 1 minute.
- Add garlic and cook for 30 seconds.
- Add blueberries, balsamic vinegar, and beef stock.
- Simmer for about 5 minutes until slightly thickened.
- Stir in butter and honey.
Taste and adjust seasoning if needed. I can depend on how you feel that day.
5. Assemble
Spread whipped feta onto each plate. Do a thin layer or else it’ll look weird.
Slice steak against the grain and place over the feta. (Or don’t slice it. Everybody should have their own fork and knife, right?)
Spoon blueberry-balsamic reduction over the steak.
Serve with vegetables of choice. Actually do this. You need the nutrients.
